Summer produce


Today we made our usual Saturday stop to the local Farmer's Market. We bought some delicious blueberries, tomatoes, banana peppers, onions, and cilantro. Prior to the farmer's market, we went to an orchard where we got 1/2 bushel (+ some) apples. We made some more applesauce. We also froze the blueberries. What a nice treat those will be this winter!

Then we canned some salsa. We had made fresh salsa last year but this is our first attempt at canning it. It looks really pretty but I'm a little disappointed in it's taste, especially after all the effort of chopping the ingredients. We used a recipe that called for a lot of vinegar and now that is what the salsa tastes like. :(

We also bought 1/2 bushel of peaches with the hope of canning them as well. Fortunately (?) they are a little under ripe, so we will can them another day. A lot of work, but soo worth it!

Kristi,
I am freezing blueberries right now too; we freeze about 30 lbs. I can peaches and pears as well about 2 bushel of each. I love that you can! Not many people do that any more.
Try this recipe for salsa. The first time I ever tried to can salsa the same thing happened to me with the vinager taste. This is my Aunt's and it is wonderful. I canned 67 pints last year.

24 cups chopped tomatoes (peeled)
1 1/2 cups jalapeno - no seeds (the more seeds you add, the hotter it becomes)
1 1/2 cups banana peppers with seeds
3 cups onions
3 t. cayenne pepper
3 t. onion powder
3 t. garlic powder
9 T. salt (we use canning salt, and I cut back to 7 T.)
3 t. cumin
2 t. black pepper
3 - 6oz. cans tomato paste
6 T. Accent
2 1/4 cups white vinegar mixed with 3 T. cornstarch

We always have opened kettled the salsa. Just bring it all to a boil and keep it boiling for about 10 minutes, pour into pints and seal with lids. Keep them close together until you hear the lids pop.
One batch is around 15 pints.

Thanks for the recipe Carrie. We will have to try that. 67 pints?!! That is a lot of salsa! Every summer we do a little freezing; mainly applesauce, corn, some jams and last year we froze peaches. This is the first year we are trying canning. I have always been intimidated by the process but know we will enjoy all the canned foods this winter. Pears is another item I would like to can. Yum!!

Yeah, we love salsa, and we like to give it away. Believe it or not I will probably do that much again this year. Let me know if you decide to can anything, and I can tell you what I find the easiest. I can peaches, pears, tomato juice, and may try apples this year..also may my own pesto sauce and freeze that too.
