Tomato Juice

Today the boys and I went to the farmer's market while Chad was seeing a few patients. We picked up a 10# box of seconds tomatoes (which made 4 qt + 1 pint). I wanted to try and make tomato juice using my mother-in-law's recipe. I would have liked to get more tomatoes but I had a hard enough time carrying Carson and this 10# box, plus making sure Andrew stayed with me while walking to the car. We came back and picked up a few other items; onions, potatoes, zucchini, yellow squash, blackberries and some buckeyes.

Barb has given us several quarts of tomato juice in the past. I really like having it for chili, goulash and just about anything you would use tomato juice for. Andrew once again enjoyed helping us make the juice. I think this is the first time we used the Victorian Strainer for anything other than applesauce. This was so slick! Now I would like to get some of the other attachments for it, like the salsa screen.

I am SO impressed with all of your preserving. It makes me so eager to have peaches and tomatoes to can...they probably won't be ready around here for a few weeks. Way to go on the juice! I loved having tomatoes last year (it was the first time I had tried them).
