
I made these Company Muffins (Andrew helped with the stirring) from the cookbook Simply in Season yesterday. I read in our local paper a way to make heart shaped muffins/cupcakes out of a regular muffin tray. Line the tray with paper or foil muffin liners and place a marble between each of the liners and the tray. I gave it a try, do you think these could pass as heart shaped? maybe it would work better with cake batter.
The boys both loved these muffins. I was so glad because Andrew doesn't eat very many fruits and vegetables. They had them for a snack in the late afternoon yesterday. When Chad got home from work I was telling him about how the boys devoured them and mentioned that there was carrots, apples, raisins and flax seed meal in them. Chad turned his nose up and said sarcastically "Yum!" I guess Andrew gets his sweet tooth and dislike of veggies naturally!
Company Muffins
1/2 cup flour
1/2 cup whole wheat flour
1 cup oat bran or rolled oats
3/4 cup brown sugar
1 T. ground cinnamon
2 t. baking soda
1 t. baking powder
1/2 t. salt
In large bowl combine and stir well
2 large tart apples (peeled, cored, and shredded)
1 1/2 cups carrots (finely shredded)
1 cup chopped walnuts or flax seed meal
1/2 cup raisins
Add and stir to coat. Make well in center.
2 eggs (slightly beaten)
1/2 cup milk (I used water b/c of Carson)
1/4 cup oil
In a separate bowl mix together. Pour into flour mixture. Stir just until moistened. Fill muffin tins about 3/4 full. Bake in preheated oven at 375 for 18-20 minutes.
And for the record, Chad did think they were tasty.
