Black Bean Salsa with Pineapple

Last night we went to a couple's house from church. The young adults get together once a month. We have only gone to one other of these gatherings since we started attending this church. We were always out of town the other times they got together. It is nice to have this group of people. The past four years prior to moving here we didn't have a church we could call home. Over those four years we went to several different churches but just couldn't find "the one". Most of the couples have young children that Andrew & Carson enjoying playing with. They usually bring a snack to share. This is what we took. It was very tasty, different from the typical salsa I make & pretty too don't you think??

Black Bean Salsa with Pineapple

1 can (15oz) black beans, drained and rinsed
2 cups pineapple tidbits, drained (reserve juice)-I chopped these up a little
1 cup red bell pepper, diced
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1/4 cup reserved pineapple juice
1 T. olive oil
1 seeded jalapeno pepper, minced

Combine all ingredients in a bowl. Toss and serve with tortilla chips.

This looks good. I'll have to try it when Dad isn't home. I'm sure he'd know there were pineapples in there!
