Slice ciabatta bread into sandwich size pieces, cut off top. (I couldn't find bread at Kroger, so I bought the ciabatta rolls which worked very well!) Drizzle top and bottom with olive oil. Sprinkle with salt and pepper. Place fresh basil on bottom half. Place tomatoes on top of basil and fresh mozzarella on top of tomatoes. Broil for 4-5 minutes, or until cheese is melted and bread lightly toasted. YUM!!

A Delicious Sandwich
A few weeks ago, the boys and I went over to a friends' house after both our boys were done with preschool for the morning. We had lunch with them and spent the afternoon playing together. She made the children hot dogs, carrots, & strawberries. For us two mommas she made these delicious sandwiches, as well as fresh greens and a bowl of strawberries and blueberries. I felt like I was at a little cafe!
